Ingredients: Yields: 16 muffins
- ¾ cup /260g. wheat flour
- 1½ cups /180g. all purpose flour
- 1 tsp. /5g. baking soda
- ¾ tsp. /4g. baking powder
- 1 tsp. /5g. ground cinnamon
- 1 tsp. /5g. vanilla extract
- 1 cup /128g. granola
- ½ cup /100g. white sugar
- 1 cup /240g. milk
- ½ cup /100g. canola oil
- 2 medium eggs
- Spread: De La Grenade Orange Marmalade De La Grenade Grapefruit Marmalade
Instructions:
- Place 16 muffin cups in muffin pan or spray muffin pans with cooking spray.
- Heat the oven to 400 degrees F/200 degrees C
- In a large bowl, whisk together flour, baking soda, baking powder, cinnamon and sugar.
- In a small bowl, whisk together milk, oil and vanilla.
- Add liquid ingredients into dry ingredients and stir with a wooden spoon until barely mixed.
- Stir in 3/4 cup granola.
- Using a medium scoop, fill prepared muffin cups 2/3’s full.
- Choice of fruits may be added at this time.
- Top each muffin with the remaining granola.
- Bake for 15 minutes or until a toothpick inserted in the center of the muffin comes out fairly clean – a few crumbs are fine. Serve warm with De La Grenade Orange or Grapefruit Marmalade. Enjoy!
