Crunchy Granola Muffins with Orange or Grapefruit Marmalade

Ingredients: Yields: 16 muffins

  • ¾ cup /260g. wheat flour
  • 1½ cups /180g. all purpose flour
  • 1 tsp. /5g. baking soda
  • ¾ tsp. /4g. baking powder
  • 1 tsp. /5g. ground cinnamon
  • 1 tsp. /5g. vanilla extract
  • 1 cup /128g. granola
  • ½ cup /100g. white sugar
  • 1 cup /240g. milk
  • ½ cup /100g. canola oil
  • 2 medium eggs
  • Spread: De La Grenade Orange Marmalade De La Grenade Grapefruit Marmalade

Instructions:

  1. Place 16 muffin cups in muffin pan or spray muffin pans with cooking spray.
  2. Heat the oven to 400 degrees F/200 degrees C
  3. In a large bowl, whisk together flour, baking soda, baking powder, cinnamon and sugar.
  4. In a small bowl, whisk together milk, oil and vanilla.
  5. Add liquid ingredients into dry ingredients and stir with a wooden spoon until barely mixed.
  6. Stir in 3/4 cup granola.
  7. Using a medium scoop, fill prepared muffin cups 2/3’s full.
  8. Choice of fruits may be added at this time.
  9. Top each muffin with the remaining granola. 
  10. Bake for 15 minutes or until a toothpick inserted in the center of the muffin comes out fairly clean – a few crumbs are fine. Serve warm with De La Grenade Orange or Grapefruit Marmalade. Enjoy!
